In the Netherlands, they call this kind of loaf “Tijgerbrood,” or tiger bread, after the spotted look of the crust. The distinctive Dutch crunch crust has a dappled pattern, whose darkness will depend on how long the yeast has been allowed to rise. To make Dutch crunch, a baker will brush unbaked loaves with a mixture of rice flour, yeast, sugar, salt, oil, and water. You can get sourdough decorated with the crackle of Dutch crunch at Boudin Bakery if you want the ultimate Bay Area bread, but it’s more often found on sweet French rolls and served at a deli counter. Technically, the Dutch crunch is not a unique species of bread, but rather a topping that may be applied to any kind of loaf. Until recently, the Dutch crunch was largely unknown outside of the Bay Area and the Netherlands, but the rest of the world is starting to catch on. Here’s an example of one of the hot sandwiches Charlee Cheesesteak with roast beef, Baerlic cheese sauce, fresh green peppers, onions, roasted peppers, mushrooms, onions- IMHO I recommend adding extra cheese like provolone in addition to the beer cheese sauce, and overall I still prefer the Godfather.While Bay Area natives may take it for granted, it is as much of a local specialty as burritos or cioppino. They also have hot sandwiches, and an interesting vegan sandwich with Avocado Chickpea Spread with Cilantro, Lime and Cucumber. My favorite sandwich is The Godfather, which is a cold sandwich stacked with Genoa Salami, Mortadella, Capocollo, Deluxe Ham, Prosciutto, and Provolone Cheese, and then loaded up with what they call “The Works”: your choice of mustard (yellow, spicy brown, or dijon), mayo, lettuce, tomatoes, onions, pickles, Italian dressing, and hot or mild pepper salad. It’s something from the Bay Area and is a white bread with a rice flour coating that bakes up incredibly doughy on the inside but crisp on top and has this pretty crackled look. Note that the Pearl location has no seating – it is literally a grab and go operation. The new location is in the NW Pearl District and original one is on SE Division. Their super crunchy Dutch Crunch roll bread, as well as their traditional bread for sub sandwiches, at two locations. Currently their modified hours are only 11-3 pm so mainly lunch service (they used to be open until 6 pm where I would sometimes grab a sandwich for dinner).
